Sorry, folks, these were gone before I could snap a picture!

 Soft and super-peanut buttery cookies. Even gluten people will love ’em!

Ingredients:

  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar, packed
  • 1/2 cup margarine
  • 3/4 cup creamy peanut butter 
  • 2 Tb. milk
  • 1 tsp vanilla
  • 1 large egg
  • 1 tsp xanthan gum
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 & 3/4 cups plus rice flour
  • 3 Tb potato starch
  • 1 Tb corn starch

Directions:

Preheat oven to 325 degrees. Spray cookie sheets with cooking oil & set aside.

Mix together sugars, butter, & peanut butter until creamy. Add vanilla, milk, and eggs. Blend well. In a separate bowl, mix dry ingredients, then add slowly to peanut butter, mixing well between each addition. Dough will be very soft.

Place in refrigerator for about 20 minutes, then make small 1″ round balls by rolling dough in palm of hands. Place on cookie tray about 2″ apart. Dip a fork in granulated sugar and use the tines to press the dough ball down flat. If you make an x pattern with the fork, it’s extra pretty, no pun intended. =)

Bake about 12 minutes (10-20 depending on elevation and oven). Cookies will be slightly more brown and firmer when done.
