I’m not trying to brag when I say this recipe has made me more friends than any other recipe. I mean, really, who doesn’t love banana nut bread? When I make it, people are always drooling over my shoulder. Of course, I fail to mention it’s gluten free until they’ve fallen head-over-heels in love.

Ingredients:

  • 1 1/2 cups rice flour
  • 3/4 cups sugar
  • 1/4 cup tapioca flour
  • 1/4 cup corn starch
  • 1 tsp xanthan gum
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup chopped walnuts
  • 2-3 bananas, mashed
  • 1/4 cup margerine
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla

Directions:

Mix dry ingredients. In a separate bowl, mash bananas and blend with eggs, milk, and vanilla. Add to dry ingredients and blend until smooth. Toss in walnuts, mixing well. Pour into a greased bread pan and bake at 350 degrees for about 45 minutes.
